  • 6 cups of water
  • ½ cup of dark or Chinese soy sauce
  • ½ cup of light soy sauce
  • 4 tbsp of brown sugar
  • 4 chopped green onions - each cut into about 3 sections
  • 2 thumb size ginger, chopped roughly and large
  • 3 cloves of whole garlic pressed lightly
  • 2 star anise (optional)
  • ground black pepper to taste
  • 4 chicken thighs
  1. In a good size pot, add the water, soy sauce, brown sugar, green onions, ginger, garlic, star anise, and pepper. Stir until it is well combined.
  2. Place the chicken thighs in, cover with a lid, and bring it to a boil over medium hight heat.
  3. After a boil, reduce the heat to medium and allow to simmer for 30 to 40 minutes.
  4. Serve with some hot rice or noodles with the sauce over the top.
  5. Enjoy your soy sauce chicken.
