The cooking tips to these meatless sandwiches are as follows: First, you want to use an extra firm tofu to maintain the body and texture while preparing and frying them. The tofu in this recipe is sliced into 3 by 3 inch pieces about 1/2 and inch thick. This size fits perfectly into a sub bun. We use some fairly basic seasoning, but you can use whatever seasoning you like. Make sure your oil is 350 degrees F. You can use a candy thermometer to test the temperature of the oil. If you don’t have one, you can drop a piece of flour in the oil. If it sizzles, you know the it’s ready. The tofu blocks will brown up fairly fast, so only leave them fry for about a minute and a half on each side. I use processed cheddar cheese slices, but you may want to use your favorite cheese. We use our won homemade coleslaw and dressing which is fantastic. If you’re strapped for time and resources, however, you may want to buy them.Give them a try and let us know what you think.
Ingredients:
- 350 grams of tofu, cut into slices
- 1 egg, beaten
- 1/2 cup of breadcrumbs
- 1/2 cup of flour
- 1/4 tsp of salt
- 1/2 tsp of pepper
- 1 tsp of paprika
- 1/2 tsp of garlic
For the coleslaw:
- 1/2 cup of mayonnaise
- 1 tbsp of sugar
- 3 tbsp of milk
- 1 tbsp of vinegar
- 2 cloves of garlic, crushed
- salt and pepper to taste
- 1/4 head cabbage cut in thinly strips
- 1 small onion chopped
- 1/2 carrot julienne
- Combine the first 6 ingredients of coleslaw ingredients and stir. In a separate bowl, combine cabbage, onion and carrot. Pour in the mixture and mix until combined. Set aside in the fridge.
- Add the flour to a bowl followed by the garlic, paprika, salt, and pepper. Mix until everything is well combined. Add the egg to another bowl and beat it. Place the breadcrumbs in a third bowl.
- Cut the tofu into 3 by 3 by 1/2 inch thick slices. Dredge the pieces of tofu in the flour, egg, and bread crumbs. Set them aside on a plate and repeat the process for the remaining pieces of tofu.
- Add about 2 inches of oil to a pan and heat it to 350 degrees F. Turn the heat to medium low. Place the tofu in and fry it, in batches, for about 1 1/2 minutes on each side. Remove the tofu and set it aside on a plate lined with a paper towel.
- Slice a sub bun in half and lay the tofu on. Place a cheese slice over the tofu followed by the coleslaw. Drizzle some dressing over the top and place the top bun on.
- Serve and enjoy your tofu coleslaw salad.
