Mediterranean Chicken

Mediterranean chicken is a Greek inspired chicken dish made with chicken, olives, capers and tomatoes. There are tons of recipes with different ingredients and variations which stem from different regions of the Mediterranean. The taste of this dish is somewhat unique, savory, and different from other chicken stews found in the country.

The ingredients, as always, are adjustable. If you don’t have kalamata olives on hand, you can use black or green olives. Capers really go well along with olives; however, they are optional, as well. To ensure a good outcome from the chicken, we encourage you to marinate the chicken overnight. But if you are running out of time, 3 hours will be fine. You can also grill the chicken instead of searing in a pan. Personally, grilling is definitely the best way to go, especially if it’s summer time. If you want something new to your taste buds, this dish is waiting for you to try.

  • 4 medium chicken breasts or any cut
  • 3 tbsp fresh rosemary, chopped
  • 1/4 tsp thyme
  • 15-20 grape or cherry tomatoes
  • 1/2 cup kalamata or black olives, drained
  • 1/2 cup capers, rinsed (optional)
  • 1/4 tsp lemon juice
  • salt and pepper to taste

  1. Place chicken in a deep bowl. Add the rosemary, thyme, salt, pepper, and 3 tbsp olive oil. Mix well until fully coated. Marinate it for at least 3 hours, over night is preferred.
  2. Toss tomatoes, capers, black olives, lemon juice, and 1 tbsp olive oil  in a mixing bowl. Set aside.
  3. After marinating, add olive oil in a preheated skillet. Place the chicken skin side down  and sear over medium heat until both sides are light brown. Approximately 3 minutes on each sides. Set aside in a baking dish.
  4. Add the tomato mixture in a baking dish with the chicken. Making sure it’s distributed evenly.
  5. Place the baking dish  in a 475 degrees F preheated oven and cook for at least 40 minutes or until chicken is cooked through.
  6. Serve and enjoy!
