One Pan Cumin Chicken in 30 Minutes

Cumin chicken is made with a delicious combination of boneless skinless chicken breasts spiced with cumin, oregano, garlic salt, and ground black pepper. A mixture of salsa, water, and more cumin is then mixed and poured over it. I use mild salsa but medium or hot can be used as well. You can add any additional flavors to the salsa such as hot sauce, if you are really adventurous.  

The dish makes a great midweek meal as it can be done in one pan and can be served up in 30 minutes. 

First, the chicken is fried over medium high heat until browned on both sides. This will take eight minutes or so. I use olive oil for the frying, but you can use canola oil or vegetable oil too. It really depends on your taste. Next, the sauce is poured over, boiled, a lid is placed on, the heat reduced to medium low, and simmered for 10 to 12 minutes. 

The chicken is plated up, the remaining sauce poured over the top, garnished with cilantro, and serve. You can also use a side dish of potatoes or rice, whichever is your preference.

Ingredients
  • 3 boneless, skinless chicken breasts about 6 oz each
  • 2 tsp of ground cumin, divided
  • 1/2 tsp of dried oregano
  • 1/4 tsp of garlic salt
  • pepper to taste
  • 1/2 cup of mild salsa
  • 1/4 cup of water
  • 1 tbsp of olive oil for cooking
  • cilantro for garnish
Instructions
  1. Add the spices to a small mixing bowl and mix well. Remember to use only half the cumin.
  2. In a separate bowl, add in the salsa, water, and cumin. Mix until well combined.
  3. Spread the mixture over both sides of the chicken.
  4. Add the olive oil to a pan over medium high heat
  5. Place the chicken in and brown on both sides. This will take about 8 minutes or so.
  6. Pour the sauce over the top of the chicken and bring it to a boil.
  7. Put a lid on, reduce the heat to medium low and allow to simmer for 10 to 12 minutes.
  8. Plate the chicken up, pour the remaining sauce over the top, garnish with cilantro and serve.
  9. Enjoy your one pan cumin chicken in 30 minutes.
