Who doesn't love eggs for breakfast. As a matter of fact, have them for lunch or dinner as well. Having said that, there are eggs and there are perfect eggs. I have to say beyond the shadow of a doubt, cloud eggs are perfect. As stated above, there are like a brush with heaven.

Separate the whites from the yolks. Place each in a separate bowl.
Put the egg whites into the bowl of a stand mixer. Be sure the bowl is clean and free from grease. I often wipe mine out with a paper towel and some lemon juice. Mix until stiff peaks form.
Add in the ham, salt, pepper, and garlic. Gently fold together.
Spoon the mixture out onto a baking sheet forming 3 separate piles. Billow it out so it appears cloud like. Make a well in the centre.
Place the clouds into a 400 degree F or 200 C preheated oven for about 4 or 5 minutes until they begin to brown.
Remove from the oven and gently place the yolks into the wells. Place back in the oven for 3 to 4 minutes until the yolks are set.
Garnish with parsley, serve, and enjoy your cloud eggs.

These are the ingredients I add to the whipped whites. Of course, you can add your own. Some grated cheese would be nice as well.
