25 Minute Sicilian Olive Chicken – DELICIOSO

Description

I was having dinner guests over one night and needed dinner in a hurry. I didn't want just any dinner, however. I wanted something on the Italian side and certainly something that would impress them. Then I came up with the idea of Sicilian olive chicken. The results certainly didn't let me down.

Ingredients
  • 2 large boneless skinless chicken breasts (cut in half)
  • 1 teaspoon salt
  • 1 1/2 teaspoon ground black pepper
  • 2 teaspoons Italian seasoning
  • 1 - 2 tablespoon olive oil for frying
  • 1 can 540 ml or 15 oz of Italian diced tomatoes (If you can't find Italian, use the regular diced tomatoes.)
  • 1/2 cup green and black olives, mixed (If you don't have black, just use green.)
  • 1 tablespoon capers
  • 1 - 2 large handfuls of baby spinach (You can also use frozen if you have it on hand.)
Instructions
  1. Season the chicken on both sides with salt, pepper, and Italian seasoning. 

  2. Add oil to a pan over medium high heat. Place the chicken in and fry until cooked through and browned on both sides. This should take about 5 or 6 minutes. Once cooked, set aside on a plate. 

  3. In the same pan, add in the tomatoes and stir to deglaze the pan. Next, add in the olives, capers, and spinach. Place a lid on and allow to simmer until the spinach wilts down. 

  4. Stir the sauce until well incorporated. Place the chicken back in, spoon sauce over the top and serve.

  5. Enjoy your 25 minutes Sicilian olive chicken.

Note

I always cut my chicken breasts in half to allow faster even cooking. You can use the whole breast, just adjust the cooking time accordingly.
