30 minute cheesy chicken rice and broccoli is so easy to put together and incredibly delicious. As with many of our recipes, most of the ingredients you will have right in your pantry. Another fantastic thing about the recipe is that it's all done in one pan. What more can you ask for. Once again, this recipe stemmed from a peek in the fridge and an overzealous mind. In other words, I came home one night, took a look at what I had in the fridge, and threw it together. The outcome was out of this world. Believe me, it is a must try for your family and friends.

Description

Imagine, coming home, grabbing a few things out of the fridge, and having dinner on the table in 30 minutes. Well, this cheesy chicken rice and broccoli is the answer. Your family and dinner guests will rave over it.

Ingredients
  • 2 tablespoons oil for frying
  • 1 pound boneless skinless chicken breasts cut into cubes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano
  • 2 cloves garlic, chopped
  • 1/2 small onion, chopped
  • 1 cup uncooked rice (I use long grain, but you can use the rice of your choice.)
  • 2 1/2 cups chicken stock
  • 2 cups grated cheddar cheese (I use Tex Mex, but you can use the cheese of your choice.)
  • 2 medium stalks of broccoli, cut into florets
Instructions
  1. Add the oil to a pan over medium high heat. Place the chicken in and season it with salt, pepper, and oregano. Stir and fry until cooked through. This should take 4 or 5 minutes. 

  2. Add in the onion and garlic. Stir and saute until fragrant.

  3. Put the rice in and stir. Pour the chicken stock in, stir, and bring to a boil. Reduce the heat, put a lid on, and allow to simmer for about 12 minutes.

  4. Add the broccoli in ensuring it's evenly distributed. Toss, place the lid back on, and continue to cook over low heat for about 8 minutes.

  5. Turn off the heat, place in half a cup of cheese, and toss until incorporated.

  6. Spread the remaining cheese over the top, place the lid back on for about 2 minutes, and allow the cheese to melt.

  7. Serve and enjoy your cheesy chicken rice and broccoli.

I use long grain rice because I like the texture, but you can use the rice of your choice.
