Imagine, coming home, grabbing a few things out of the fridge, and having dinner on the table in 30 minutes. Well, this cheesy chicken rice and broccoli is the answer. Your family and dinner guests will rave over it.

Add the oil to a pan over medium high heat. Place the chicken in and season it with salt, pepper, and oregano. Stir and fry until cooked through. This should take 4 or 5 minutes.
Add in the onion and garlic. Stir and saute until fragrant.
Put the rice in and stir. Pour the chicken stock in, stir, and bring to a boil. Reduce the heat, put a lid on, and allow to simmer for about 12 minutes.
Add the broccoli in ensuring it's evenly distributed. Toss, place the lid back on, and continue to cook over low heat for about 8 minutes.
Turn off the heat, place in half a cup of cheese, and toss until incorporated.
Spread the remaining cheese over the top, place the lid back on for about 2 minutes, and allow the cheese to melt.
Serve and enjoy your cheesy chicken rice and broccoli.
