Ingredients
  • 2 large boneless, skinless chicken breasts, cut into strips (about 1 pound or 1/2 kilo of chicken breasts)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 5 slices bacon, fried and cut into bite size chunks
  • 1 1/2 cup penne pasta, cooked to al dente
  • 3/4 teaspoons paprika
  • 3/4 teaspoons Italian seasoning
  • 1/2 teaspoon hot pepper flakes
  • 2 large hand fulls of baby spinach (This is equivalent to about 4 cups)
  • 15 medium cherry tomatoes, cut in half
  • 1 1/2 cup heavy cream
  • 1/2 cup dried Parmesan
  • 1/2 tablespoon fresh lemon juice
  • 3 cloves chopped garlic
Instructions
  1. Fry the bacon to the point where it's just about crisp and cut into bite size chunks. Set aside.

  2. Add the chicken to the bacon grease and season with salt, pepper, paprika, Italian seasoning, and hot pepper flakes. Stir and cook until browned and cooked through. Set aside on a plate.

  3. Add the spinach,  tomatoes, and garlic to the same pan. Cook until the spinach has wilted. Add in the heavy cream and bring to a soft boil.

  4. Sprinkle in the Parmesan and stir until well incorporated.

  5. Place the chicken, bacon, and lemon juice in. Stir once again.

  6. Add the pasta in. Toss until everything is well combined.

  7. Turn off the heat, plate, and serve.

  8. Enjoy your 30 minute creamy chicken and bacon pasta.

Note

I use heavy cream in the dish. If you are diet conscious, you can use half cream and half milk.

I find powdered Parmesan works well, but if you have grated, that works fine too.

Adjust the seasoning according to your liking.
