Being a breakfast lover and a firm believer that it’s one of the most important meals of the day, I’m always on the search for something different. I love bacon and eggs as much as the next person, but too much of one thing is boring.
Yes, an omelet is good. But again, the same type of omelet time-after-time is not. Then, out of nowhere, I got the idea for these cute omelet bites. Oh my goodness, they were so good I had to share them.

Amazing Omelet Bites
Description
Omelet bites are a simple combination of eggs, tomatoes, onions, and other spices. They only take about half an hour to make and are great for an on-the-run meal. I often make them up the night before, place them in the fridge, a grab on the next morning.

Add the eggs to a mixing bowl followed by the milk, tomato, green onions, garlic, bacon, salt, pepper, and cheese. Mix until well combined.

Spray the inside of a muffin tray. A six muffin tray should suffice. Fill it about 3/4 full with the mixture.

Place the mixture into a 350 degree F or 180 C preheated oven for about 20 to 25 minutes.

Allow them to cool completely. Serve with your favourite sauce and enjoy your omelet bites.

As always, the ingredients can vary according to your liking. Other spices can be used and amounts varied. If you want to keep the cholesterol count low, egg beaters can be used.
