Amazing Potato Beef Cakes

Description

Two of my easy recipe staples are potatoes and ground beef. Combine them into a cake and they become outstanding. That's exactly what these amazing potato beef cakes are.

Ingredients
  • 2 medium potatoes, cubed
  • 3/4 pounds ground beef
  • 1 tablespoon oil for frying
  • 1/2 small chopped onion
  • 4 cloves chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 14 ounces (400 ml) of tomato sauce
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 1/2 cup mozzarella cheese, grated
  • 2 tablespoons chopped parsley, divided
Instructions
  1. Add the potatoes to boiling water and allow to cook for about 15 minutes.

  2. While the potatoes are cooking, add the oil to a pan over medium high heat. Place the onion and garlic in and saute until the the onions are translucent and the garlic is fragrant. 

  3. Add in the ground beef and fry until browned. 

  4. Put the salt, pepper, and paprika in stir and fry for a few minutes. Pour the tomato sauce in stir and bring to a boil. 

  5. Drain the potatoes and add to a bowl. Add in the butter, salt, pepper, garlic powder, and 1 tbsp of parsley. Mash until well combined.

  6. Flatten the mash out with the smooth end of a spoon and divide into four even sections. Scoop each section up and place it into the palm of you hand. Form it into a ball and place in a baking dish.

  7. Smooth into a circle or disk and make a well in the centre. Add some mozzarella to the well followed by a couple of tablespoons of the ground beef mixture and top with more mozzarella. 

  8. Place in a 375 degree F or 195 C preheated oven for about 12 minutes. 

  9. Plate, garnish with the remaining parsley, serve, and enjoy.

Note

I use medium ground beef and drain it, but you can use the cut of your choice. 

Alter the seasoning according to you liking.
