Argentine Locro Stew – A Hearty Meat Stew You Must Make

Everybody loves a meaty hearty stew. This Locro stew is filled with protein. In this Cook n’ Share version of locro stew, we use chorizo sausage, beef, and pork ribs. Then, we combine butternut squash, corn, carrots, onion, garlic, bell peppers, and seasoning. The outcome is simply to die for. This stew will certainly warm your heart and soul on a winter’s day or any day for that matter.

I love any meat stew and this loco meat stew is simply the best. How can you beat a big dish or protein combined with veggies. The entire family will love this dish.



Off On

  1. Add some oil to a pan over medium high heat. Place the meat in and sear on all sides. Sear in batches if you have to. Set aside on a plate. 

  2. Add oil or butter to a Dutch oven or large pot over medium high heat. Place the onion, garlic, and bell peppers in. Saute until the garlic is fragrant. 

  3. Add in the salt, pepper, and paprika. Stir and saute for a couple of minutes. 

  4. Put the meat back in and stir. Don't forget the juices from the plate. Follow the meat by the squash, carrots, and corn. 

  5. Pour the water in, stir, and bring to a boil. Place a lid on and allow to simmer for 10 minutes. 

  6. After 10 minutes, put the beans in and mix. Place the lid back on and allow to simmer for another 10 minutes. 

    You can allow this to simmer longer - up to 3 hours.
  7. Ladle into a bowl, garnish with parsley, and enjoy.

The meat listed above is what I use, but feel free to use the meat of your choice.

You can allow the stew to simmer for 3 hours or more if you have time.

Use hominy beans if you can find them.
