Aunt Lil’s Pork Chops with Tomato and Cheese

I remember when I was growing up and going to my aunt's house. I could hardly wait because I know that Aunt Lil would make her famous pork chops with tomato and cheese. A superb taste I will never forget. The pork chops were always fresh butterfly chops from the farm. They were covered with a layer of her homemade diced tomatoes and covered with mozzarella. Of course, they were always seasoned to perfection. When they came out out of the oven, the aroma filled the entire house and the taste was no more disappointing. To this day, I make her pork chops once or twice a month. Although, I can't duplicate Aunt Lil's Pork chops with tomato and cheese perfectly, I managed to come awfully close. Description

Pork chops with tomato and cheese is an old family recipe that is so simple to make. Simply season the butterfly chops. You can use bone in chops as well. Add some diced tomatoes and mozzarella. Pop them in the oven and dinner is ready.

Ingredients
  • 4 butterfly pork chops (Small to medium chops will suffice.)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons minced garlic
  • 1 can diced tomatoes (15 oz)
  • 3/4 cups grated mozzarella cheese
  • 1 tablespoon chopped fresh basil
Instructions
  1. Heat your oven to 375 degrees F or 175 C.

  2. Season the chops, on both sides, with salt, pepper, and minced garlic.

  3. Add a layer of diced tomatoes to the bottom of a baking dish. Place the chops over the top followed by a second layer of tomatoes. Spread the mozzarella over the top.

  4. Cover the baking dish with aluminum foil and place in the middle rack of the oven for 30 minutes.

  5. Remove the foil and allow it to bake for an additional 10 minutes to brown.

  6. Remove from the oven and garnish with fresh parsley. Serve and enjoy your pork chops with tomato and cheese.

As with all recipes, you can alter the ingredients according to your liking. The sky is really the limit as to what you can season the chops with. I have just provided the basics. For example, there are lots of pork rubs or flavour explosion that could be added.
