Pork chops with tomato and cheese is an old family recipe that is so simple to make. Simply season the butterfly chops. You can use bone in chops as well. Add some diced tomatoes and mozzarella. Pop them in the oven and dinner is ready.
Heat your oven to 375 degrees F or 175 C.
Season the chops, on both sides, with salt, pepper, and minced garlic.
Add a layer of diced tomatoes to the bottom of a baking dish. Place the chops over the top followed by a second layer of tomatoes. Spread the mozzarella over the top.
Cover the baking dish with aluminum foil and place in the middle rack of the oven for 30 minutes.
Remove the foil and allow it to bake for an additional 10 minutes to brown.
Remove from the oven and garnish with fresh parsley. Serve and enjoy your pork chops with tomato and cheese.
