Bacon Veggie Soup

There is nothing better to warm the soul as veggie noodle soup. It is simple and easy to make. The great thing is that you can make it in thirty minutes or under. I always make it on a winter's day or a cool rainy day. The ingredients of this soup are so simple but the impact is strong. Serve it up with some rolls or bread. Believe me, your family and friends will love it.

Description

One a cold day there is nothing nicer that a hot bowl of soup. I love my soup with lots of veggies and some meat. In light of this, I decided to put together this bacon veggie soup which came out incredible. Believe me, this soup will take the chill out of your bones and warm your belly.

Ingredients
  • 250 grams Chowmein noodles
  • 5 Strips of bacon
  • 3 slices Button mushroom
  • 1 cup Cole slaw mix
  • 1 Stock of celery, chopped
  • 2 Green onions, sliced
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 3 cups Beef stock
Instructions
  1. Bring some water to a boil in a medium size pot. Add the noodles in and boil them for about 3 minutes or until they are soft. Drain and set aside.

  2. In a fairly large pot, add the bacon in and fry until it changes colour - about 3 minutes or so. 

  3. After the bacon changes colour, add in the mushrooms and fry until they become translucent. 

  4. Place in the coleslaw mix, celery, green onion, salt, and pepper. Stir and saute for 2 or 3 minutes minutes. Don't overcook the veggies or they will become soggy.

  5. Pour in the beef stock, place a lid on, and bring it to a boil. 

  6. To build the soup, spoon out some veggies and put them in one half of the bowl follow by the noodles on the other half. Ladle the broth over the top. 

  7. Serve and enjoy your bacon veggie soup.
