Bacon Wrapped Meatloaf Roll

baconwrappedmeatloafroll

This bacon wrapped meatloaf rolls is out of this world. Imagine, a deliciously seasoned meatloaf stuffed with cheese and spinach wrapped in bacon. The outcome is simple beyond words. I served this to my dinner guests a couple of days ago and they said they have never tasted anything so good in their lives. Of course they came back for more and begged for the recipe. Actually, a few of them have made it and plan to make it again.

Description

I've had meatloaf, but I've never had one this good. Our bacon wrapped meatloaf is made with a combination of a deliciously season meatloaf with cheese and spinach. To top the goodness off, it's wrapped in bacon. It just doesn't get any better.

Ingredients
  • 2 pounds ground beef
  • 8 slices cheese
  • 4 cups spinach
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 cloves minced garlic
  • 1/2 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons Ketchup
  • 2 large eggs
  • 1/3 cup seasoned bread crumbs
Instructions
  1. Add the ground beef to a bowl followed by the garlic, salt, pepper, onion powder, Worcestershire sauce, ketchup, eggs, and bread crumbs. Using your hands or a spoon, mix until well combined.

  2. Line a baking sheet with aluminum foil. Place the ground beef mixture on and spread out into an even, large rectangle.

  3. Lay the cheese and spinach over the top.

  4. Grab one end of the foil as a handle and roll the mixture into a tight roll or log. The foil only helps you hold the one end of the mixture. The rest will have to be rolled without the foil.

  5. Wrap bacon around the mixture and coat with BBQ sauce. I use Stubbs but use the sauce of your choice.

  6. Place the roll into a 350 degree F or 180 C preheated oven for about 40 minutes.

  7. Remove from the oven and allow it to cool and set for a few minutes.

  8. Slice, plate, serve, and enjoy your bacon wrapped meatloaf roll.
