Bell Pepper Eggs in 15 Minutes

Our bell pepper eggs are a great combination of 3 colors and types of bell peppers, salt, pepper, chili flakes, sunny side up eggs, and some freshly chopped parsley.

I always cover and fry to perfection. Serve these with some toast and they are they star of all breakfast recipes. The great thing is, they can be done in 15 minutes or under. As always, give them a try and let us know how you like them.

  1. Slice bell peppers into rings about 1/4 inch thick. Remove the seeds.

  2. Heat cooking oil in a pan.  Pan fry bell pepper for about a minute on each side. 

  3. Crack the eggs in. Season with salt, pepper, chili flakes and Parsley. 

  4. Cover the pan. Cook until eggs are set. 

  5. Enjoy with toast.
