Add the butter to a pan over medium high heat and allow it to melt down. Add in the onion. Stir and saute until just about translucent. Add in the garlic. Stir and saute until fragrant - about 2 minutes.
Add all of the remaining ingredients, except for the lima beans, to the pot. Stir and bring to a boil.
Partially cover, reduce the heat to medium, and allow to simmer for about 40 minutes.
After 40 minutes, add in the lima beans and simmer for an additional 10 minutes.
Ladle into a serving bowl and enjoy your Brunswick stew.

I used left over chicken and pork. You can also buy it from the store or make it fresh. For example, boil chicken breasts and shred them.
Frozen of fresh lima beans work best. If you use them, you can add them in with the rest of the ingredients. The canned can become mushy. That's why I add them in last.
