  1. Using a clever or sharp knife, cut chicken up into bit size chunks. Set aside in a bowl. 

  2. Add in soy sauces, oyster sauce, sugar, and pepper. Stir until chicken is completely covered. Set aside in the fridge for 30 minutes or overnight. You can use it right away if you are in a hurry. 

  3. Add the oil into a pan over medium high heat. Place in the ginger, garlic, and green onions. Stir and saute until fragrant. 

  4. Put the chicken in. Toss and fry until the chicken is cooked through and no longer pink. It should begin to turn a dark color and caramelize. 

  5. Pour the remaining sauce over and continue to cook for a few minutes.
