Description

I'm always looking for an easy sensational breakfast. And believe me, this cheesy bacon and egg rice casserole is certainly it. Such a simple combination that will make your palate dance. It's creamy, rich, rice filled, and loaded with bacon and cheese. The great thing is, it can be made up so quickly and served up for breakfast, lunch, or dinner. Ingredients
  • 3 cups cooked rice
  • 6 medium strips of bacon
  • 3 large eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic
  • 1 large egg yolk
  • 1 cup grated mozzarella
  • 3 tablespoons unsalted butter (white sauce)
  • 3 tablespoons all purpose flour (white sauce)
  • 1 1/2 cup milk (white sauce)
  • 3/4 cups white and orange cheddar (white sauce)
  • 1 large chopped green onion for garnish
Instructions
  1. Add the bacon to a pan over medium high heat. Fry until semi crispy. It actually depends on the crispness you enjoy. Set it aside on a plate.

  2. Place the rice into a mixing bowl. Add in the egg, salt, pepper, and garlic. Gently mix until well incorporated. 

  3. Place the rice into a pan and stir and fry until heated through and the egg is cooked. Add the rice to the bottom of a baking dish.

  4. To make the white sauce, place the butter into a pan over medium low heat. Allow it to melt down. Add in the flour and whisk until a roux forms. Pour in half the milk and continue to whisk until it thickens. Pour the remaining milk in and whisk once again. Add in the cheese and whisk until the mixture is smooth and silky. 

  5. Pour the white sauce over the rice and smooth out. Crack in the egg and lay the bacon over the top. Spread the mozzarella over the bacon.

  6. Baked at 425 degree F for about 14 or 15 minutes until the egg is set and everything is heated through. 

  7. Serve and enjoy.

I use 3 eggs but 4 or more can be used as well.

Fry the bacon to your desired level of crispiness. 

Add as much cheese as you like. They type of cheese can vary as well. 

You can adjust the seasoning according to your liking. Add extras if you wish.
