Season the chicken with salt and pepper on both sides.
To prepare the dredging stations add the flour, remaining salt, pepper, garlic, and Italian seasoning to one container. Stir until well combined. Add the eggs to a second container and beat them well. Add the Panko bread crumbs and parmesan to a third container and mix well. Pick up each chicken breast and dredge them in each container until completely coasted and set aside on a baking sheet.
Place the butter into a pan over medium high heat, allow it to melt down, and then add in the oil. Place the chicken breast in and fry, in batches, until they are golden brown on each side. Set aside on a plate.
Pour the marinara sauce evenly onto a baking sheet and season with the remainder of Italian seasoning. Spread the mozzarella over the sauce. Do it in rectangular piles so it looks like it will perfectly cover each breast. Place in a 425 C preheated oven for about 15 minutes until the sauce heats and the cheese melts.
