Ingredients
  • 3 medium boneless, skinless chicken breasts
  • 2 cups macaroni noodles (You can use the noodles of your choice as well.)
  • 1/2 small red onion, chopped
  • 1 medium can of pineapple tid bits, sweetened
  • 1/4 cup raisins
  • 1/4 cup relish, sweet
  • 2 cups mayo (Use the mayo of your choice.)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 2 teaspoons ground black pepper
  • 1 cup old cheddar cheese, diced
Instructions
  1. Place the chicken breasts into a pot of hot water and bring to a boil. Cook for about 20 minutes until cooked through. Shred the chicken. I shred my chicken in a stand mixer but you can use two forks as well. 

  2. Add the noodles to a pot of salted boiling water and cook until al dente. This should take about 10 minutes. Drain, rinse, and add to a boil. 

  3. Add the chicken and the rest of the ingredients to the noodles. Mix, using two spoons, until well combined. 

  4. Allow to cool, serve, and enjoy your chicken salad.
