Ingredients
    Ingredients for the Chicken Teriyaki Pineapple Bowls
  • 1 small pineapple cut in half
  • 1/3 cup low sodium soy sauce
  • 3 tablespoons packed brown sugar
  • 1 teaspoon minced garlic
  • 1 tablespoon pineapple juice from the pineapple
  • 1 Thumb size ginger, chopped
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon oil for cooking
  • 1 large boneless skinless chicken breast cut into bit size chunks
  • 1 tablespoon corn starch
  • 1 tablespoon water
  • 1 cup pre-made rice
  • 1 teaspoon sesame seeds for garnish
  • 1 medium green onion, chopped for garnish
Instructions
    How to make the Chicken Teriyaki Pineapple Bowls
  1. Cut the pineapple in half and slice about 1 inch all around from the outside edge. You want to form a rectangle about 1 inch from the outside edge and slice about an inch from the bottom of the pineapple. Make slices diagonally through the rectangle on one side and do the same along the other side. Scoop out the flesh and place it in a bowl.

  2. To make the sauce, pour the soy sauce into a measuring cup.  Then add in the brown sugar, garlic, pineapple juice, ginger, sesame oil, and pepper. Stir until well combined.

  3. Add the oil to the pan over medium high heat and place the chicken in. Season the chicken with salt and pepper and cook on each side for about three or four minutes until nicely browned.

  4. Pour the sauce over the chicken and bring it to a simmer. Mix the water and cornstarch together and pour it into the sauce. Stir until the sauce thickens.

  5. Build the bowl by adding the rice to 1/2 of the pineapple and the teriyaki to the other half.

  6. Garnish with sesame seeds and green onions. Serve and enjoy your chicken teriyaki pineapple bowls.
