Our 30 min chocolate lava cake with a peanut butter swirl is an absolute delight. On might say a little taste of heaven. It made with a simple combination of chocolate chips, smooth peanut butter, powdered sugar, flour, and a few other ingredients. The outcome is simply out of this world. It's perfect for Valentine's Day or for a dessert in general. I have made several chocolate molten lava cakes before, but I thought what about adding peanut butter to the equation. I'm so glad I did. Believe me, when I served it to my family and friends, they went wild.

Description

I just love chocolate and there is nothing better than a beautiful piece of lava cake. To make life even better, I added some peanut butter to the recipe. The outcome was sensational. As one member said, "There is a taste of heaven in every bite."

Ingredients
  • 1/2 cup semi-sweet chocolate chips
  • 8 ounces (227 grams) unsalted butter, cubed
  • 4 large eggs
  • 1 cup powdered sugar
  • 8 drops vanilla extract
  • 1/2 cup (68 grams) all purpose flour
  • 1 tablespoon melted butter for coating ramekin (I also use Pam or other cooking sprays.)
  • 2 - 3 tablespoons smooth peanut butter
  • 5 - 10 medium raspberries for garnish
  • 10 small mint leaves for garnish
  • 1 tablespoon powder sugar for dusting
Instructions
  1. Add about an inch to an inch and a half of water to a medium pot. Bring it to a soft boil. 

  2. Place the chocolate chips and butter into a medium size bowl. Put the bowl over the top of the boiling water and melt the chocolate and butter down while stirring. Set aside. 

  3. Add the eggs, sugar, and vanilla extract to the bowl of a stand mixer or a second bowl. Mix until well incorporated. The eggs should turn a pale yellow.

  4. Pour the chocolate mixture into the egg mixture and mix once again until smooth and silky. 

  5. Sift the flour in and mix once again until well incorporated.

  6. Grease ramekins with butter or oil. Fill a ramekin (about 3 inches in diameter by 2 inches deep) 1/4 full. Place a small scoop of peanut butter into the middle. Continue to fill the ramekin about 3/4 full. 

  7. Place the ramekins onto a baking tray and bake at 450 degrees F for about 14 minutes.

  8. Allow the cake to cool a bit (about 3-4 minutes) and flip onto a plate. Garnish with raspberries and mint.

  9. Enjoy your chocolate lava cake with a peanut butter twist.

Note

I use semi-sweet chocolate chips but use the chocolate of your choice. Dark chocolate is nice too.

The garnish is entirely up to you. I prefer raspberries and mint.

The brand of peanut butter is your call as well.
