I just love chocolate and there is nothing better than a beautiful piece of lava cake. To make life even better, I added some peanut butter to the recipe. The outcome was sensational. As one member said, "There is a taste of heaven in every bite."

Add about an inch to an inch and a half of water to a medium pot. Bring it to a soft boil.
Place the chocolate chips and butter into a medium size bowl. Put the bowl over the top of the boiling water and melt the chocolate and butter down while stirring. Set aside.
Add the eggs, sugar, and vanilla extract to the bowl of a stand mixer or a second bowl. Mix until well incorporated. The eggs should turn a pale yellow.
Pour the chocolate mixture into the egg mixture and mix once again until smooth and silky.
Sift the flour in and mix once again until well incorporated.
Grease ramekins with butter or oil. Fill a ramekin (about 3 inches in diameter by 2 inches deep) 1/4 full. Place a small scoop of peanut butter into the middle. Continue to fill the ramekin about 3/4 full.
Place the ramekins onto a baking tray and bake at 450 degrees F for about 14 minutes.
Allow the cake to cool a bit (about 3-4 minutes) and flip onto a plate. Garnish with raspberries and mint.

I use semi-sweet chocolate chips but use the chocolate of your choice. Dark chocolate is nice too.
