Chicken noodle soup is a classic around the world. This recipe is simple to make and contains ingredients that most people will have in their pantry or fridges. Member Sara Roberts says: "It's one of the richest, creamiest, chicken noodle soups she has ever tasted. Not to mention, so simple to make."

  • 3 tablespoons unsalted butter
  • 1 small onion (chopped)
  • 2 medium carrots, sliced
  • 2 medium stalks of celery
  • 2 tablespoons all purpose flour
  • 1 cup milk
  • 4 cups chicken stock
  • 3 cups shredded chicken (I use leftover chicken. You can also poach breast or buy it from the grocery store.)
  • 1 medium sprig of thyme
  • 1 teaspoon dried parsley (You can certainly use fresh if you have it on hand.)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 cups egg noodles (You can also add the noodles of your choice.)
  • 1/2 cup heavy cream
  1. Add the butter to a large pot over medium heat. Place in the onions, carrots, and celery. Stir and saute until softened.

  2. While the veggies are cooking, add the flour to the milk and stir.

  3. Once the vegetables are tender, add in the milk and stir to ensure there are no lumps. Pour the chicken stock in and stir once again.

  4. Put the chicken in followed by the thyme, parsley, salt, and pepper. Stir and bring to a soft boil.

  5. Place the noodles in, stir, cover, and allow to simmer for about 10 to 12 minutes until the noodles are cooked.

  6. Add in the cream, stir, and allow to simmer for another couple of minutes.

  7. Serve and enjoy your classic creamy chicken noodle soup.

This recipe produces, in my opinion, a rich and creamy soup. You can, however, add additional ingredients to suit your likings. For example, extra vegetables or seasoning would be a welcomed addition.
