Ingredients
  • 3 Medium Italian Sausage, cut into bite size chunks
  • 1 Pound of medium ground beef
  • 1 Tbsp of oil for frying
  • 1/2 Green bell pepper, julienned
  • 1/2 Red bell pepper, julienned
  • 1 Potato, peeled and diced
  • 1/2 Onion, chopped
  • 3 Cloves of chopped garlic
  • 1 Tsp of salt
  • 1 1/2 Tsp of ground black pepper
  • 2 Tsp Italian seasoning
  • 1 Tsp smoked paprika
  • 2 Tsp Worcestershire sauce
  • 1 Medium can of stewed tomatoes (You can use diced as well. Don't drain the liquid off. Add it to the mixture.)
  • 1/2 Cup of beef broth
  • 1 Medium can of red kidney beans, drained and rinsed
  • 2 Cups of old sharp cheddar cheese (By all means use the cheese of your choice.)
Instructions
  1. Add some oil to a pan over medium high heat. Place the sausage in and fry for a couple of minutes until they begin to cook. Add in the ground beef and break it apart. Fry until cooked through and it begins to brown. 

  2. Push the beef and sausage to one side and add in the onion and garlic. Stir and saute until fragrant. This will take a couple of minutes. Add in the bell peppers and potatoes. Stir and fry until they begin to soften a bit. Season with salt, pepper, Italian seasoning, paprika, and Worcestershire sauce. Stir until the ingredients are coated with the seasoning and everything is well combined. Put the tomatoes in and pour in the beef broth. Stir once again. Place a lid on, reduce the heat, and allow it to simmer for 15 to 20 minutes until the potatoes are tender. 

    I partially cover it and stir occasionally. If you find it get too dry and in a bit of water.
  3. Add in the red kidney beans and stir until well combined. Place the lid back on and allow it to simmer for another 3 or 4 minutes until the beans heat through. Add the cheese over the top, turn off the heat, and place the lid back on to allow the cheese to melt. 

  4. Serve and enjoy your coal miner's supper!
