  1. Add some oil to a pan over medium high heat. Place in the bacon and sausage. Fry until the bacon is on the crispy side and the sausage is cooked through. Set aside in a bowl.Β

  2. In the same pan, keep some of the bacon grease, add in the potatoes. Stir and fry until fork tender. Add in the bell pepper, onion, and garlic. Stir and saute for 2 or 3 minutes. Add the bacon and sausage back in and stir again. Season with salt, pepper, and Italian seasoning. Stir and fry for a few minutes.Β

  3. Add the eggs and milk to a bowl and whisk until well combined. Pour the eggs over the mixture in the pan. Stir and scramble until set and well combined. Turn down the heat and spread the cheese over, place a lid on, and allow to cook for about 2 mintues until the cheese melts.Β

Note

Eggs:

  • Don't overcook! For fluffy scrambled eggs, remove them from the heat just before they are fully set. They will continue to cook slightly off the heat.
  • Creamier Eggs: Want even creamier eggs? Try using heavy cream or sour cream instead of milk.
  • Seasoning: Add a pinch of nutmeg or smoked paprika for a touch of extra flavor.
  • Spicy Kick: Love a little heat? Throw in some chopped jalapenos or diced red pepper flakes with the vegetables.

Veggies:

  • Diced vs. Chopped: Dicing the vegetables will ensure they cook evenly with the potatoes.
  • Veggie Swap: Feel free to swap the potatoes for other diced veggies like bell peppers, broccoli florets, or chopped mushrooms.
  • Pre-cook Option: If you're short on time, pre-cook the potatoes in the microwave or by boiling them separately before adding them to the skillet.

Protein:

  • Ditch the Bacon: Substitute diced ham, sausage, or even shredded leftover chicken for the bacon.
  • Vegetarian Option: Skip the meat entirely and add a can of drained and rinsed black beans or chickpeas for a protein boost.

Cheese:

  • Variety is Key! Swap the cheddar cheese for Monterey Jack, pepper jack, or even crumbled blue cheese for a different flavor profile.
  • Melting Tip: For even meltier cheese, sprinkle it over the eggs after they are almost cooked through and let the residual heat melt it.

Leftovers:

  • Reheat Wisely: Scrambled eggs can become rubbery when reheated. Reheat gently over low heat with a splash of milk or cream to maintain moisture.
  • Breakfast Burrito: Leftovers make a fantastic breakfast burrito filling! Scramble them again with a little salsa and cheese, then wrap in a warmed tortilla and enjoy.

Bonus Tip:

  • Fresh Herbs: For a bright and fresh finish, sprinkle with chopped chives, parsley, or cilantro before serving.
