Wow! Cream of Mushroom Soup in 30 Minutes is right. This is one of the morst delicious soups I've ever had made in such a short period of time. Just imagine, company comes over for lunch and you whip up some soup in less than 30 minutes. Anybody would be impressed. The great thing is although the soup is rich and cream, it is made with a few simple ingredients. Most of them you'll have right in your pantry. Just grab some fresh mushrooms and some cream and you're good to go.

Description

Imagine having company over and whipping up homemade soup in 25 minutes or less. I bet their mouths would drop. Well, with our cream of mushroom soup, it's possible. All the ingredients will probably be right in your pantry. Just get some fresh mushroom and cream and you're off to the races.

Ingredients
  • 3 tablespoons unsalted butter
  • 1/2 small chopped onion
  • 2 cloves chopped garlic
  • 8 large button mushrooms, sliced fairly thin
  • 3 tablespoons all purpose flour
  • 1 1/2 cup chicken stock
  • 1 1/2 cup table cream or half and half (If you're diet conscious, use milk.)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon chopped fresh parsley for garnish
Instructions
  1. Add the butter to a medium pot over medium high heat. Allow it to melt down. Add in the onion, garlic, and mushrooms. Stir and saute until the mushrooms begin to sweat and the garlic is fragrant. 

  2. Put the flour in. Stir and cook for about 2 minutes until the flour is cooked and the mushrooms are coated. 

  3. Pour the chicken stock and cream in followed by the salt, pepper, and thyme. Stir until well combined and it begins to simmer.

  4. Allow to simmer for 10 to 15 minutes until it begins to thicken.

  5. Pour into a bowl, garnish with parsley, and enjoy your cream of mushroom soup.

Note

As always, you can alter the seasoning according to your liking. Even add different spices if you like.

I let the soup simmer for about 10 minutes which is perfect. If you want it more soupy, you can add a bit of milk or water.

Some recipes blend the soup after cooking. I never do this, but you can if you wish.
