Creamy chicken pesto pasta is another of our simple and delicious dishes. The great thing is it’s a 30 minute recipe which makes it a fantastic midweek meal. Who doesn’t love coming home and having dinner on the table in half an hour. Your family and friends will think it’s a gourmet meat that you spent hours on.
Most of the ingredients for the recipe, you’ll have in your pantry. The only things your might have to buy is a jar of pesto and sun dried tomatoes. You can pick these up in just about any grocery store.

Creamy Chicken Pesto Pasta

Creamy chicken pesto pasta is another of our 30 minute midweek meals. The ingredients are simple and straight forward. As mentioned above, you will have most of them tucked away in your pantry. Believe me, it's a dish both your family and friends will love.

Season both side of the chicken with salt, pepper, and garlic.

Add the butter and oil to a pan over medium high heat and add the chicken in. Fry for about 5 minutes on each side until browned and cooked though. Set aside on a plate.

While the chicken is frying, boil a pot of boiling water and add in some salt. Place the pasta in and cook it for about 9 minutes until al dente. Scoop out half a cup of water and reserve for the sauce. Drain and set aside.

In the same pan, pour in the water from the pasta and the cream. Place in the sun dried tomatoes, pesto, Italian seasoning, salt, and pepper. Stir and allow it to simmer for a few minutes.

Place the pasta, cherry tomatoes, and parmesan in. Stir until well incorporated and the pasta is well coated.

Plate, slice the chicken, and serve it over top with more sauce drizzled over and extra Parmesan.

You can make the pesto from scratch or buy it in the store. More seasoning can be added to the chicken if you wish. The same applies to the sauce.
