Ingredients
  • 2 medium boneless, skinless chicken breasts cut in half
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup cooking or heavy cream
  • 1/2 cup pasta water, reserved
  • 1/4 cup basil pesto
  • 2 tablespoons sundried tomatoes
  • 1/4 cup grated parmesan
  • 10 medium cherry tomatoes, cut in half (You can use grape or other tomatoes too.)
  • 1 tablespoon unsalted butter for frying
  • 1 tablespoon oil for frying
  • 2 cups fusilli pasta or the pasta of your choice
Instructions
  1. Season both side of the chicken with salt, pepper, and garlic.

  2. Add the butter and oil to a pan over medium high heat and add the chicken in. Fry for about 5 minutes on each side until browned and cooked though. Set aside on a plate.

  3. While the chicken is frying, boil a pot of boiling water and add in some salt. Place the pasta in and cook it for about 9 minutes until al dente. Scoop out half a cup of water and reserve for the sauce. Drain and set aside.

  4. In the same pan, pour in the water from the pasta and the cream. Place in the sun dried tomatoes, pesto, Italian seasoning, salt, and pepper. Stir and allow it to simmer for a few minutes.

  5. Place the pasta, cherry tomatoes, and parmesan in. Stir until well incorporated and the pasta is well coated.

  6. Plate, slice the chicken, and serve it over top with more sauce drizzled over and extra Parmesan.

  7. Enjoy your creamy chicken pesto pasta.
