Note
Sausage choice matters: Mild Italian keeps things classic, honey garlic adds a touch of sweetness, and breakfast sausage makes this extra cozy. Use what you like — this recipe is forgiving.
Don’t rush the garlic: Add it just until fragrant. Overcooked garlic can turn bitter and overpower the sauce.
Cherry tomatoes are optional but recommended: They add color and a little brightness without turning this into a tomato-based pasta.
Sauce too thick? Stir in a splash of milk or broth to loosen it up. Creamy pastas always thicken as they sit.
Pasta swaps work well: Any short pasta will do — penne, rotini, shells, or macaroni all hold the sauce nicely.
Leftovers reheat beautifully: Warm gently on the stove or in the microwave with a splash of milk to bring the sauce back to life.
