Believe me, this dish is so easy, delicious, and rich that it will be one of your crowd pleasers. Another great things is it can be made up in 30 minutes which makes it another great midweek meal. It is fantastic served up with noodles, rice, or mashed. A nice garden salad on the side would certainly not go amiss either.

If you're looking for a quick and easy midweek meal, then this creamy marry me chicken is exactly what you are looking for. Made with chicken thighs, cream, seasoning, and some TLC, this recipe will yield a crowd pleaser that won't be forgotten. Believe me, you'll want to make it again and again.

Ingredients
  • 8 medium boneless skinless chicken thighs (You can use bone in and skin on if you wish.)
  • 1 tablespoon oil for frying
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 small chopped onion
  • 4 cloves chopped garlic
  • 1/2 teaspoon hot pepper flakes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fresh oregano (You can also use dried.)
  • 1/2 cup chicken broth
  • 1/2 cup table cream
  • 1/2 cup dried parmesan
  • 1/2 cup sun dried tomatoes
  • 2 tablespoons fresh parsley or basil for garnish
Instructions
  1. Add the oil to a pan over medium high heat. Place the chicken in and season it with salt and pepper. Fry for about 7 minutes on one side. Flip it over, season, and fry for an additional 7 minutes or until no longer pink and the juices run clear. Set aside on a plate. 

  2. In the same pan, add in the onion, garlic, pepper flakes, Italian seasoning, and oregano. Stir and saute until the garlic is fragrant. 

  3. Add in the chicken stock, table cream, sun dried tomatoes, and Parmesan. Stir and bring to a boil. 

  4. Add the chicken back in, spoon some sauce over the top, and allow it to simmer for about 7 minutes. 

  5. Plate, garnish, with parsley or basil, and enjoy.

Note

I use boneless skinless chicken thighs but you can use breasts as well. I just find the thighs are really little bit juicier.

The sun-dried tomatoes can pick up in just about any grocery store. Do usually come in a small container or jar.

I find table cream is the best as it contains about 18% fat. You can also use half-and-half which contains 10% fat. On the other hand, if you are really diet conscious, you can use milk. Milk, however, does not produce the best results as it's not a creamy enough.

In terms of the rest of the ingredients in seasoning, you can adjust them according to your liking.
