Cuban Style Pork Chops with Mojo

I first had these Cuban style chops during a visit to to the island in 2018. They have been part of my menu ever since. I have to admit that they are a bit of extra work but they are well worth it. What really makes the recipe is the mojo. If you use a bit of care when making the marinate, the chops will be fantastic.

Description

These cuban style pork chops with mojo are marinated and grilled to perfection. It is common knowledge that pork is a meat loved in Cuba. If you have ever tried Cuban food, you will know the method of making the mojo or marinate and cut of meat used are both superb.

Ingredients
    For the Pork Chops
  • 3 medium pork loins, cut thick with a slit in the middle
  • 3 slices Swiss cheese
  • 3 slices deli ham
  • 3 slices dill pickles
  • For the Mojo or Marinate
  • 1/3 cup orange juic
  • 1/4 cup olive oil
  • 1 small fresh lime juice
  • 1 teaspoon dried oregano (Use fresh if you got it.)
  • 1 teaspoon cumin
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup fresh cilantro
Instructions
  1. To make the mojo or marinate, combine all of the ingredients in a large measuring cup or bowl and mix until well combined. 

     

  2. Place the chops in a large zip lock bag and pour the marinate over them. Seal the bag and message the marinate into the meat. Place in the fridge for at least half an hour. Overnight is best. . 
  3. Lay the cheese out and place a piece of ham over the top followed by a slice of dill pickle. Fold in half. 

  4. Insert the ham into the cut in the cut of the pork chops. Place on the grill and grill on one side for 5 minutes. Flip and grill on the other side for an additional 3 minutes or so.

  5. Place the pork chops on a baking tray, spoon some of the marinate over the top, and bake at 375 F or 190 C for about 15 minutes or until the internal temperature reaches 145 degree C. 

  6. Serve and enjoy your Cuban style pork chops with mojo.

Note

I use boneless pork loin. You can also use a thick bone-in chop if you wish. We only marinate the chops for 30 minutes but overnight is actually preferred. To really get a rich full flavour, add an extra slice of cheese and dill pickle.
