These cuban style pork chops with mojo are marinated and grilled to perfection. It is common knowledge that pork is a meat loved in Cuba. If you have ever tried Cuban food, you will know the method of making the mojo or marinate and cut of meat used are both superb.

To make the mojo or marinate, combine all of the ingredients in a large measuring cup or bowl and mix until well combined.
Lay the cheese out and place a piece of ham over the top followed by a slice of dill pickle. Fold in half.
Insert the ham into the cut in the cut of the pork chops. Place on the grill and grill on one side for 5 minutes. Flip and grill on the other side for an additional 3 minutes or so.
Place the pork chops on a baking tray, spoon some of the marinate over the top, and bake at 375 F or 190 C for about 15 minutes or until the internal temperature reaches 145 degree C.

I use boneless pork loin. You can also use a thick bone-in chop if you wish. We only marinate the chops for 30 minutes but overnight is actually preferred. To really get a rich full flavour, add an extra slice of cheese and dill pickle.
