Some meals don’t need to be fancy to become family favourites, and Dad’s Bacon Cheeseburger Rice is one of those simple dinners that just hits the spot. It’s loaded with seasoned ground beef, smoky bacon, tender rice, and plenty of melted cheese — all the flavours of a good bacon cheeseburger packed into one hearty skillet.

This is the kind of meal Dad would throw together when everyone was hungry and nobody wanted to wait. It’s simple, filling, budget-friendly, and made with everyday ingredients you probably already have in the kitchen. Best of all, everything comes together in one pan, which means plenty of flavour without a sink full of dishes.

Serve it straight from the skillet while the cheese is still hot and gooey. It’s warm, comforting, a little nostalgic, and exactly the kind of no-fuss family dinner that deserves a place in the regular rotation.

  1. Add the bacon to a large skillet over medium heat. Fry until crispy, then remove it from the pan and set aside. Once cool enough to handle, crumble the bacon into pieces. Leave a small amount of the bacon fat in the skillet for added flavour.

  2. Add the ground beef to the same skillet. Cook over medium-high heat, breaking it up as it cooks, until browned.

  3. Push the beef to one side and add the chopped onion and garlic. Stir and cook until the onion begins to soften and the garlic becomes fragrant.

  4. Add the chopped onion and garlic to the beef. Stir and cook until the onion begins to soften and the garlic becomes fragrant.

  5. Add the long-grain rice and stir it into the beef mixture until evenly distributed.

  6. Pour in the beef broth and stir well. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer until the rice is tender and has absorbed most of the broth.

  7. Stir a portion of the crumbled bacon back into the rice, reserving some for the top.

  8. Sprinkle the shredded cheddar cheese evenly over the skillet. Add the remaining crispy bacon over the cheese.

  9. Cover the skillet briefly and allow the cheese to melt.

  10. Garnish with chopped fresh parsley and serve hot.

Note

For the best results, use long-grain white rice and keep the skillet covered while it simmers. Cooking times can vary slightly depending on the rice and the size of your skillet, so check for tenderness near the end of the cooking time.

If the rice becomes too dry before it is fully cooked, add a small splash of beef broth and continue simmering. If there is still excess liquid once the rice is tender, remove the lid and simmer for a few minutes until it reduces.

Feel free to adjust the hot pepper flakes to suit your taste or leave them out completely for a milder family-friendly version. For an extra cheeseburger touch, you can also serve it with chopped pickles, diced tomatoes, or a little extra ketchup and mustard on the side.

Freshly shredded cheddar melts especially well, but pre-shredded cheese will work too. Leftovers can be stored in a sealed container in the refrigerator for up to 3 days and reheated gently in the microwave or on the stovetop with a splash of broth.
