Dreamy cheesy chicken melt recipe is made with a simple combination of shredded chicken, seasoning, mayo, celery, and green onions. I'm always looking for a snack or quick lunch. These simple and easy dreamy cheesy chicken melts are just the ticket. They can be made in about 20 minutes and are absolutely incredible. One dinner guest said that she had never had a better open face sandwich.

Ingredients
  • 2 medium boneless, skinless chicken breasts, shredded
  • 1 large stalk of celery, chopped
  • 1 - 2 medium green onions, chopped
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • 1/4 teaspoon hot pepper flakes
  • 1/3 cup mayo
  • 1 teaspoon lemon juice
  • 3 - 4 slices brown or white bread, toasted
  • 1 1/2 cup grated Swiss cheese
Instructions
  1. Add the chicken and all of the other ingredients to a mixing bowl. Mix until well combined.

  2. Spread the mixture evenly onto the toast followed by a generous layer of Swiss cheese over the top.

  3. Broil for 2 to 3 minutes until the cheese is melted and bubbly. 

  4. Plate, garnish with green onions, and enjoy your dreamy cheesy chicken melts.

Note

As always, the seasoning in the chicken salad is only a suggestion. You can add the seasoning of your choice or adjust the ones I have suggested. 

I use brown bread but feel free to use white.

I enjoy Swiss cheese as it adds an element of sweetness to the sandwich but cheddar or other cheeses can be used as well.

Chicken strips you can buy from the grocery store work well, but feel free to poach your own chicken or used leftovers.
