Drunken Beef Noodles: 30 Minute Comfort Food

I love Thai food and drunken noodles are an original dish from Thailand. The are also called drunk noodles, pad ki mao, or pad kimao. How and why they are called drunken noodles is a matter of controversy. Some say it's a meal is eaten directly after a night of drinking. Others claim it's because of the nature of the dish in tears right through the diluted pallets of people who are drunk. Where the dish actually came from is irrelevant, however. The fact of the matter is, it's incredibly delicious, easy to make, and one of the nicest comfort foods I've ever had.

Description

The dish is often made up in several ways. In this recipe, it's just a matter of making up a simple sauce, soaking some noodles, frying up some beef, and putting everything together. In a matter of the 30 minutes, you have a simply delicious, mouthwatering, comfort food.

Ingredients
  • 1 pound (16 oz 1/2 kilo) wide rice noodles
  • 3/4 pounds (800 grams) sirloin beef cut into thin strips
  • 2 tablespoons oyster sauce
  • 2 tablespoons dark soy sauce (Use light if dark is not available.)
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons water
  • 1 tablespoon oil for frying
  • 1 small chopped onion
  • 4 cloves finely chopped garlic
  • 1/2 small red bell pepper
  • 1 teaspoon hot chilli flakes
  • 3/4 cups fresh basil
  • 2 tablespoons fresh chives
Instructions
  1. Add the noodles to a bowl and pour some very hot tap water over them. Allow them to soak for 10 to 15 minutes or until they're soft. Set the noodles aside.

  2. In a smaller bowl add in the oyster sauce, fish sauce, soy sauce, sugar, and water. Stir until well combined.

  3. Add the oil to a wok or pan over medium high heat. Add in the onion, garlic, red bell peppers, and pepper flakes. Stir and sauté for about 2 to 3 minutes until the garlic is fragrant.

  4. Put the beef in the pan, stir, and sauté for 4 to 5 minutes until the beef is browned.

  5. Add the noodles in, then the sauce, gently toss and cook until the noodles are heated through and covered with the sauce.

  6. Garnish with basil and chives. Gently stir once again.

  7. Serve and enjoy your drunken noodles.

As always, adjust the seasoning according to your liking. This recipe serves about four people comfortably. If you have more dinner gas, simply double the recipe.

Using hot chillies is the best. At the time of making this recipe, I didn't have them. In light of that, I just used hot chilli flakes. If you find it necessary to do this, you can adjust the Chile flakes according to your liking.

I use sirloin beef, but feel free to use the beats of your choice. You can also use other proteins such as prawns, chicken, lamb etc.
