Add the chicken to a bowl followed by the salt, pepper, and egg. Mix until well combined. You can add extra ingredients if you wish.Β

Pour the oil into a pan over medium high heat and heat to 350 degrees F or 180 C.

Place the chicken in and fry, in batches, until it's a golden brown and cooked through. Set aside on a wire rack.Β

Empty the oil and wipe out the pan. Add the butter in and allow it to melt down.Β

Add in the hot sauce, hot pepper flakes, and vinegar. Stir and bring to a boil.Β

Add the chicken back in and toss until completely covered in the hot sauce.

Plate, garnish with green onions, and serve.Β

Note
Chicken thighs or other cuts of chicken can be used.
I suggest buffalo hot sauce but any hot sauce can be used.
Extra ingredients such as smoked paprika, etc. are fine to season the chicken.
I use vegetable oil for frying but use other oil if you wish. Make sure it has a high smoke point though.
