Ingredients
    For the Potatoes
  • 10 small potatoes, cut into slices
  • 1 tablespoon oil for frying
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • For the Ground Beef
  • 1 pound medium ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 1 large can of tomato sauce (10 oz)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 3 cups grated mozzarella cheese (For top of casserole)
  • 2 tablespoons fresh parsley chopped (For garnish)
Instructions
  1. Add the oil to a pan over medium high heat. Place the potatoes in followed by the paprika, salt, and pepper. Stir and fry until the potatoes are fork tender. Add the potatoes to the bottom of a casserole dish.

  2. Add the ground beef to the same pan. Break up, stir, and fry until cooked through and browned.

  3. Add in the onion and garlic. Stir and saute until fragrant. Add in the tomato sauce, Italian seasoning, paprika, salt, and pepper. Stir until well combined. Reduce the heat and allow the mixture to simmer for about 10 minutes.

  4. Pour the sauce over the potatoes and spread the mozzarella over the top. Place in a 375 degree F or 190 C preheated oven for about 15 minutes.

  5. Garnish with parsley, slice, serve, and enjoy your cheesy ground beef casserole.

Note
  1. Potato Type: Use starchy potatoes like Russets for the best texture. They'll become creamy and tender when baked.

  2. Ground Beef: Opt for lean ground beef to reduce excess grease in the casserole.

  3. Seasonings: Feel free to add other of your favorite seasonings.

  4. Cheese: Use a good melting mozzarella, or a blend for that gooey, cheesy topping.

  5. Make-Ahead: You can assemble the casserole ahead of time and refrigerate it, then bake it when ready to serve.

  6. Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until heated through.

  7. Variations: Add vegetables like peas, carrots, or bell peppers to the casserole for added nutrition and flavor. You can also swap the ground beef for ground turkey or chicken if preferred.

  8. Serving Suggestions: Serve the casserole with a side salad or some steamed vegetables for a complete meal. It also pairs well with crusty bread or dinner rolls.
