The dish is exactly what the title suggests: Easy cheesy mushroom stuffed chicken - You won't be disappointed. This is one of the nicest recipes I've had. Believe me, it's certainly one you won't be disappointed with. It is so simple to make and the outcome is a family and crowd pleaser. Imagine a chicken breast stuffed with spinach, mozzarella, mushrooms, and spices. It simply doesn't get much better.

Description

Cheesy mushroom stuffed chicken is made with boneless, skinless chicken breasts, spinach, mozzarella cheese, onion, garlic, and basic spices. It is pan seared and then baked to perfection. Believe me, your family and friends will love the dish.

Ingredients
  • 2 medium boneless, skinless chicken breasts (cut part of the way down the middle)
  • 2 tablespoons unsalted butter
  • 2 cups sliced button mushrooms
  • 1/2 small chopped onion (You can use white or red.)
  • 2 cloves chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 4 cups baby spinach
  • 2 slices mozzarella
  • 1 tablespoon oil for frying (I use olive oil but you can use the oil of your choice)
Instructions
  1. Add the butter to a pan over medium high heat and let it melt down. 

  2. Place the mushrooms in and allow them to cook down for a few minutes. 

  3. After the mushrooms are browned, add in the onions, garlic, and thyme. Stir and saute until the garlic is fragrant and the onions are translucent. 

    If it looks a bit dry, add in a little more butter.
  4. Place the spinach in and cook until it begins to wilt. 

  5. Stuff the centre of the chicken breasts with the mixture. Insert the cheese and clamp together with some tooth picks. 

  6. Pour some oil into a pan over medium high heat and sear the chicken breasts on both sides.

  7. Place in a 350 degree F. or 180 C. preheated oven for about 15 minutes our until cooked through and no longer pink. 

  8. Serve with a garden salad and enjoy your easy cheesy mushroom stuffed chicken.
