Add the potatoes to a pot of water and bring to a boil.Â

In the mean time, place the bread on a flat surface and roll it out slightly.Â

Once the potatoes have boiled and become fork tender, add in the butter, milk, salt, and garlic powder. Mash until smooth and creamy. Add in a little more milk if necessary.Â

Prepare the dredging stations by adding the eggs to one container and beat them. Then add the bread crumbs to another station.Â

Using a small ice cream scoop, pick up a a level scoop of the mixture and place it in the palm of your hand. Flatten it out a bit and put the mozzarella cut into the middle and roll it back into a ball.Â

Place the potato mixture into the centre of the bread and spread it out a little. Brush some of the egg mixture around the edges of each piece of bread. Fold one piece toward the other so a triangle forms and pinch the edges shut. Using a fork, seal the edges shut.

Dredge each bread triangle into the egg mixture until fully coated and then into the bread crumbs. Set aside.

Add the oil to a pan and heat to 350 degrees F or 180 C. You can test the oil by adding a pinch of bread crumbs in. If it fizzes, it is ready.Â

Place each piece of potato bread in and fry, in batches, for about 2 minutes on each side until golden brown. Set aside on a wire rack.

Serve with a dipping sauce such as marinara and enjoy your easy cheesy potato bread.Â

This is a very basic mashed potato recipe. I sometimes add pepper, green onions, etc. to my mashed potato recipe. Sometimes, I use a ricer or strainer to make my mashed super smooth.
Use a fairly good quality bread. Make sure it's white and the bread is fresh.Â
