Chicken stew has to be one of the worlds ultimate comfort foods. It seems to soothe the soul whether it be winter, spring, summer, or fall. We make this stew with an outrageously delicious combination of potatoes, carrots, various chicken parts, peas, tomato sauce, onions, garlic, and red bell peppers. Believe me, but these ingredients are combined they will knock your socks off.

Who doesn't love chicken stew. It's like chicken soup that soothes the heart and soul. It also makes a wonderful midweek meal. This chicken stew is so easy and comforting that it will knock your socks off. Literally.

Add oil to a pan over medium high heat. Put the potatoes in and fry until the edges are browned. Set aside.

Add in the carrots and fry until browned on the edges. Set them aside.

Add in the chicken parts and season with the salt and pepper. Fry until cooked through and browned.

Put the onion, garlic, and bell peppers in. Stir and saute until fragrant and the onion is translucent.

Pour in the tomato sauce. Add the potatoes and carrots back in followed by peas and bay leaves. Stir again, place a lid on, and simmer for about 25 minutes.

Serve and enjoy your chicken stew.
