Easy chipotle chicken burrito bowl recipe is bursting with freshness and flavour. The great thing is it's simple and easy to make. I love it served up for a snack, lunch or dinner. In light of that the burrito bowl is so versatile. Leave out the rice and it would certainly fit in with your keto diet. That's another great thing about the dish: there is no wrapper. Believe me, your family will love it.

Description

The ingredients you can add to your burrito bowl are endless. I add chicken with a taco seasoning, black beans, shredded lettuce, grated cheese, homemade pico de gallo, guacamole, and corn. The sky really is the limited, however.

Ingredients
    For the Chicken
  • 1 pound boneless, skinless chicken breasts, cubed into bite size chunks
  • 4 tablespoons taco seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon fresh lime juice
  • For the Homemade Pico De Gallo
  • 2 small ripe tomatoes, chopped
  • 1/2 small onion, copped
  • 2 teaspoons fresh cilantro
  • 2 teaspoons fresh lemon juice
  • 1 pinch hot pepper flakes
  • 1/2 teaspoon salt
  • For the Homemade Sauce
  • 1/2 cup sour cream
  • 2 tablespoons chipotle peppers in adobo sauce
  • 1 teaspoon fresh lemon juice
  • For the Burrito Bowl
  • 2 cups shredded ice burg lettuce
  • 2 cups Mexican rice (You can use the rice of your choice or omit it.)
  • 1 can peaches and cream or sweet corn
  • 1 can rinsed black beans
  • 2 cups grated cheddar cheese
  • 1 medium container of guacamole
Instructions
  1. Add the chicken, taco seasoning, olive oil, and lime to a mixing bowl. Mix until well combined and the chicken is completely coated.  

  2. Cover the bowl with cling wrap and put in the fridge to marinate for about half and hour. Overnight is even better. 

  3. In the mean time, add the tomatoes, onions, cilantro, lime, salt, and hot pepper flakes to a bowl. Mix until well combined and set aside. 

  4. To make the sauce combine the sour cream, chipotle pepper sauce, and lime to another bowl and mix until well combined. 

  5. To build the burrito bowl add the lettuce to one side of a container, followed by the rice, corn, chicken, beans, pico de gallo, and cheese. I put my guacamole in a separate dish, but if you have room, add it to the container. 

  6. Serve and enjoy your chipotle chicken burrito bowl.
