Ratatouille is one of the most eye catching French dishes I have ever seen. It's made with a classic combination of green zucchini, yellow zucchini, eggplant, and tomato. When layered artistically, it gives the dish an amazing visual appeal. The sauce is simple, mild, delicious, and elegant. Who can go wrong with the sauce made from red bell peppers, tomatoes, garlic, onions, rosemary, olive oil, salt, and pepper. Yes, it might sound simple, but it is out of this world delicious. The great thing is, it's about as vegetarian as you can get.
This classic French dish is made in a variety of ways. Traditionally, it's a simple vegetable stew with sauce. I've decided to go to visually artistic way, however. Believe me, or a vegetarian dish, it is simply out of this world. Your dinner guess we'll take one look at it, and devour every bit.

Place the red bell pepper, onion, tomato, and garlic on a baking tray. Bake at 425 degree F 210 C for about 25 minutes.
Place the ingredients from the oven along with salt, pepper, rosemary, and olive oil into a blender and puree until a sauce forms.
Pour the sauce into a cast iron pan or oven friendly pan and spread it out.
Layer the vegetables over the sauce in the following order: yellow pepper, green pepper, egg plant, and tomato. Make your own patter so it look pleasing. Sprinkle parsley over the top and a drizzle of olive oil.
Place the ratatouille into a 400 degree F or 200 C oven for 20 minutes. Serve and enjoy.

One could say that this is not traditional ratatouille. The original French ratatouille is more of a stew. This recipe, however, is decorative and visually stunning. It's just something everybody would want to eat. If you wish, you can dice the veggies up and stew it.
The vegetables in this recipe are traditional ratatouille ingredients, but you can add additional vegetables if you wish.
