These tasty little rolls are a simple combination of sausage, egg, a few spices, and cheese slices. Roll these together, literally, and you get the perfect breakfast. Serve them up with some low carb ketchup and it's a morning delight.

Preheat your oven to 400 degrees F or 200 C.
Line a baking with parchment paper and place the cheese slices on leaving some space between the slices. Place in the oven and bake until melted and browned around the edges. Remove and let them cool.
Add the eggs, salt, pepper, and garlic to a mixing bowl. Whisk until well combined.
Pour the cooking oil into a fry pan over medium high heat. Add the sausage in and fry until slightly browned and no longer pink.
Pour the egg mixture over the sausage and scramble to a soft scramble.
Scoop up about a tablespoon of the mixture and place in into the centre of the cheese slices. Roll each slice up and set aside on a plate seem down.
Serve up with 1 carb ketchup or plain. Enjoy your easy keto breakfast roll ups.

Feel free to add your own spices to the eggs. Just about anything goes. Use the type of sausage you like; although, I find that Italian is so nice.
A great time saving tip is make the filling up the night before and just do the cheese in the morning.
