There is really nothing better than an easy oven roasted potatoes recipe. If you're anything like me, I love a good roasted potato. It's just something that absolutely necessary with any kind of protein such as chicken, beef, lamb, or pork. The list goes on. It is, however, a matter of finding the right recipe. My family loves a potato that has texture, flavour, easy to prepare, soft, and cloudy. This recipe seems to check all of those boxes.

I've always enjoyed baked potatoes. Certain requirements had to be met, however. First off they had to have a beautiful texture, well season, soft, and tender. Secondly, the roasted potato had to go with just about any recipe. If you're anything like me, this is the perfect roasted potato recipe for you.

Ingredients
  • 14 small red and white baby potatoes, cut in half
  • 1 cup mayo
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
Instructions
  1. Add the potatoes and seasoning to a large mixing bowl. Mix until the potatoes are well coated and everything is nicely combined.

  2. Spray a sheet pan with baking spray and lay the potatoes on skin side down.

  3. Bake at 400 degrees F or 200 C for about 30 minutes.

  4. Plate and garnish with parsley.

  5. Serve and enjoy your easy roasted potatoes.

As with any recipe, adjust the seasoning to your liking. 

I always use red and white potatoes, but feel to use that potatoes of your choice. 

The recipe calls for Hellmann's Mayo, but feel free to use the mayo of your choice.
