Description

This Full English Stuffed Potato is the ultimate twist on a classic breakfast. We’ve taken the hearty essentials of a traditional full English — sausage, bacon, beans, tomato, mushrooms, and a perfectly cooked egg — and loaded them into a crispy, oven-baked potato. Can you believe that? The result? A bold, comforting dish that’s just as fitting for dinner as it is for brunch.

With each bite, you get the rich combination of savory meat, creamy potato, and saucy beans, all wrapped up in one satisfying package. It’s a crowd-pleaser, a conversation starter, and best of all, incredibly easy to pull off. If you're craving something rustic and a little indulgent, this one’s for you.

Ingredients

Instructions

  1. Preheat your oven to 400 degree F.

  2. Spray some oil over the potatoes and dust with salt. Place on a baking sheet and put them in the oven for about 45 minutes or until fork tender. After they are done, slice them half way through diagonally and vertically. Place the butter and green onions into the centre. Mash down with a fork or spoon.

  3. Spread some butter over the potatoes followed by the onions. Follow this by mozzarella, beans, mushrooms, crumbled bacon, and sausage. Gently place the egg over.  Top with the tomatoes and a dusting of pepper.

  4. Serve and enjoy your English Full Jacket Stuffed Potato!

Note

Baking the potatoes directly on the oven rack ensures a crispier skin — rub with olive oil and salt beforehand for extra flavor.

If you prefer a shortcut, you can use microwave “jacket potatoes” and load them after warming the fillings on the stovetop.

Want to simplify? Use canned beans in tomato sauce (like Heinz) and store-bought breakfast sausage to speed things up.

These also make great brunch platters — bake multiple potatoes ahead and let guests choose their toppings.

Don’t skip the garnish — green onions or parsley really brighten up the dish.

Pairs well with a side of fruit or even a green salad to balance the richness.
