Description

The Holidays are fast approaching and there's nothing better than chicken. If you're not a turkey lover or want something different, try this balsamic honey chicken. Believe me, your family and friends will be back for more.

Ingredients
  • 4 medium bone-in chicken thighs
  • 1 tablespoon olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1/2 teaspoon onion powder
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 2 cups fresh cranberries
Instructions
  1. Add the olive oil, balsamic vinegar, honey, sugar, onion powder, garlic, salt, pepper, and rosemary to a mixing bowl. Whisk until well combined and set aside. 

  2. Season both sides of the chicken with salt and pepper. 

  3. Add some olive oil to a cast iron skillet over medium high heat. Place the chicken, skin side down, and sear for about 5 minutes. Flip and sear the other side. Set aside on a plate.

  4. In the same pan, place the cranberries in the bottom and set the chicken over them. Pout the sauce over the chicken.

  5. Place in a 350 degree or 180 C preheated oven, skin side down, for about 25 minutes. 

  6. Remove the pan and flip the chicken over. Spoon sauce over the top and place back in the oven for an additional 15 minutes. 

  7. Plate. Serve with sauce and cranberries over the top. Enjoy!
