Extra spices such as cinnamon and nutmeg can be used, as well. I usually dust the funnel cakes with confectioner's sugar which is common. They also can be topped with a fruit sauce, a glaze, or maple syrup. Feel free to use the topping of your choice.

Crack the eggs into a medium size mixing bowl followed by the milk, flour, sugar, baking powder, and salt. The dry ingredients can all be sifted together.
Whisk until a smooth batter forms.
Heat oil until it reaches about 350 degrees F or 180 C.
Using a funnel, put some of the mixture in using a circular motion. It should be about 10 inches in diameter. You can use the motion of your choice.
Fry until the cake is golden brown on one side then flip it to the other side and continue to fry until golden brown.
Repeat this process for the remaining batter.
Set the cakes on a wire rack and allow the oil to drain.
Dust with the powdered sugar and enjoy your funnel cakes!
