This French Onion Shepherd’s Pie is a cozy twist on a classic comfort dish. Savory ground beef, sweet caramelized onions, and colorful peas and carrots come together in a rich brown gravy — all topped with creamy mashed potatoes and a hidden layer of melted Swiss cheese. Baked until golden and bubbly, it’s a hearty, budget-friendly meal that delivers deep, comforting flavor in every bite.

  1. For the Mashed

    Peel and slice the potatoes. Cut them into sections and add them to a pot of boiling water. Boil for 15 minutes until fork tender. Drain. Add in the butter, milk, salt, pepper, and garlic powder. Mash until smooth and fairly creamy. Set aside. 

  2. For the Caramelized Onions

    Add the butter to a pan over medium high heat and allow it to melt down. Pour the oil in. Place the onions in and add some salt. Allow them to fry, stirring, over medium high heat until they begin to wilt down. Reduce the heat to medium low and allow the to cook for about 20 minutes until caramelized. Stir occasionally.

  3. After the onions are done, move them to one side of the pan. Add in the ground beef and break it up. Allow it to fry, over medium high heat, until cooked through and no longer pink. Add in the flour and mix. Pour in the beef broth and Worcestershire sauce. Season with Italian seasoning, garlic powder, salt, pepper, and thyme. Stir until it begins to thicken.  Add in the mixed veggies and stir once again. Set aside. 

  4. Building the Shepherd's Pie

    To build the shepherd's pie, add the beef mixture to the bottom of a casserole dish. Then add the slices of Swiss cheese over the top. This is the secret. It will fuse the beef and potatoes together. Add the potatoes over the top and smooth them out a bit. Marble the cheese over and sprinkle the bread crumbs. 

  5. Place in a 375 degree F preheated oven for about 20 minutes. 

  6. Garnish with more thyme, serve, and enjoy your French Onion Shepherd’s Pie!
