I love French toast, especially if it has a twist. These French toast blueberry muffins certainly do have a twist to them. They are made with a delicious combination of eggs, cream, bread, honey, vanilla extract, and cinnamon. Of course you are not limited to blueberries, you can use raspberries or whatever you wish. Let's face it, you can't ask for anything more unique. Once the family digs into these muffins, they will be no turning back.

Description

French toast has always been a classic breakfast. This recipe adds a twist by presenting it in the form of a muffin. As one member said: "These muffins are filled with heavenly goodness."

Ingredients
  • 3/4 cups cream (Milk will suffice as well)
  • 2 large eggs
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 6 slices bread, cubed (You can use white or brown)
  • 1 cup fresh blueberries
  • 1/4 cup honey or syrup for topping
  • 1/4 cup plain cream cheese, divided into dollops
Instructions
  1. Add the eggs, cream, honey, vanilla, and cinnamon to a mixing bowl. Mix until well combined. 

  2. Add the bread and blueberries into the mixture and gently fold using a spatula. 

  3. Spray a muffin pan with baking spray. Using an ice cream scoop or spoon, scoop the mixture into the wells. 

  4. Place the cream cheese into the centre of each muffin.

  5. Place the muffins into a 350 degree F or 180 C preheated oven for 20 minutes. 

  6. Allow to cool slightly, remove, and serve with syrup or honey. Enjoy!

Note

As mentioned above, you don't have to use blueberries, raspberries, etc. work great as well.

Adjust the cinnamon according to your taste.

The cream cheese can be left out.

Milk can be used in place of cream if you are diet conscious.
