Grilled chicken skewers with peanut butter dipping sauce (satay sauce) are simple to make and incredibly delicious. I find them great in the summer done on the barbecue. Some people thing the idea of a peanut butter dipping sauce is weird, but the taste will prove differently.

Add the chicken to a mixing bowl followed by the curry powder, sugar, salt, pepper, curry paste, and coconut milk. Using your hands, message the mixture into the chicken.
Cover the bowl with cling wrap and allow it to marinate in the fridge for about 20 minutes. Overnight is better.
Add the coconut milk, curry paste, sugar, vinegar, water, peanut butter, pepper, and salt to a sauce pan. Bring the mixture to a boil. Don't stir it until it boils due to the vinegar. Stir until well combined and simmer until the sauce thickens. Set it aside in a bowl.
Place the chicken on a skewer and set them aside. Heat your grill and place the skewers on. Grill until cooked though and no longer pink inside.
Garnish with the cilantro. Serve with the dipping sauce and enjoy your grilled chicken skewers with peanut butter dipping sauce.
