Description

Made with tender egg noodles, savory ground beef, sweet corn, crisp broccoli, and a rich, cheesy sauce, this casserole is a family-friendly favorite that's both budget-friendly and easy to make.

This classic one-pan meal is perfect for busy weeknights, potlucks, or whenever you're in the mood for simple, satisfying comfort food. Plus, it's a great way to use up pantry staples while creating a flavor-packed dish that everyone will love!

Ingredients
  • 1 Pound of ground beef
  • 2 1/2 Cups of egg noodles - or the noodles of your choice
  • 1 Small chopped onion
  • 3 Cloves of chopped garlic
  • 1 Medium can of sweet corn
  • 2 Cups of broccoli florets
  • 1 Tsp of salt
  • 1 1/2 Tsp of ground black pepper
  • 1 Tsp of Paprika
  • 1 - 2 Tsp of Italian seasoning
  • 2 Tsp of Worcestershire sauce
  • 1 Can of cream of mushroom soup
  • 1 Cup of tomato sauce
  • 1/2 Cup of sour cream
  • 1/2 Tsp of garlic powder for sauce
  • Salt and pepper sauce to taste
  • 2 Cups of grated old cheddar cheese
  • 1 Tbsp of chopped parsley for garnish
Instructions
  1. Boil salted water and add the noodles. Cook according to package instructions. Drain and set aside. I often mix some olive oil in with my pasta which helps to keep it from sticking together. 

  2. Add the ground beef to a pan over medium high heat. Stir and fry until cooked through. Drain off any excess grease if necessary. Push the beef to one side of the pan and add in the onion and garlic. Stir and saute until fragrant. Add in the corn and broccoli . Stir and toss until combined. Season with salt, pepper, paprika, Italian seasoning, and Worcestershire sauce. Stir until combined. Turn off the heat and set it aside. 

  3. To make the sauce, combine the cream of mushroom soup with the tomato sauce and sour cream. Season with a bit of pepper and garlic powder. Stir until mixed well. 

  4. To build the casserole, add a bit of the sauce to the bottom of a casserole dish and spread it out evenly. Add in half the noodles, half the beef mixture, half the sauce, and top with half the cheddar cheese. Then, repeat the process for a second layer. Place in a 375 degree F. preheated oven for 20 to 25 minutes. 

  5. Remove from the oven, serve, and enjoy your Homesteader Comfort Casserole!
